Spiced Lentil Salad with Walnuts and Cranberries!

Contrary to popular belief, I don't really eat much salad on a plant based diet. But when I do, it's a super-food salad with lots of protein and other healthful benefits! I thought I would share this salad, not only for it's amazing healthy ingredients, but because it's actually, really delicious!

The base is a blend of Kale, Broccoli, Brussel Sprouts, and Cabbage. I use a pre-bagged mix from my local grocery store, since I have no time to prep these days. That's topped with my delicious Spiced Lentils and finished off with a sprinkling of Walnuts, Cranberries, and Pumpkin Seeds. A drizzle of fat-free poppy-seed dressing is the coup de grace! 


Spiced Lentils:

2 Cups Veggie Broth
1 Cup Lentils (I used Autumn Blend)
1 tsp each of Salt, Coriander, and Cumin
1/2 tsp each of Ground Ginger, and Cinnamon
1/2 tsp Black Pepper

Bring Veggie Broth, Lentils, and seasonings to a boil, cover and turn heat down to low. Simmer for about 25 minutes or until lentils are done to your taste. Remove from heat and refrigerate until cool, about 1/2 hour.

For the Salad:

Bagged Mix of Kale, Broccoli, Brussel Sprouts and Cabbage
Dried Cranberries and Pumpkin Seeds (usually included in the bagged salad mix)
1 ounce (about a small handlful) Walnuts

Fat-Free Poppy Seed Dressing

For each serving, place about a cup of the Kale salad in a bowl. Top with about 1/2 cup of the spiced lentils. Garnish with the walnuts, cranberries, and pumpkin seeds. Drizzle the Poppy Seed Dressing over the top.
