Better than Mom's Meatloaf! Don't tell Mom!

In my 30 plus years of cooking, I've made a lot of meatloafs.  I mean A LOT.  I've used all kinds of different ingredients, and stuffings, even one with spinach, sundried tomatoes and mozzarella.  You know what?  I've found that simplest is best. Maybe Mom was on to something after all...I've found that the secret is in starting with good, quality beef...if the ground beef is good, you don't really need much else. The glaze is the bomb...and... it's GLUTEN FREE!


1 to 1 and 1/2 lbs ground beef (good quality!)
1 large or jumbo egg
1/4 C gluten free rice crackers (crushed) or GFoatmeal
garlic salt
italian seasoning
1/4 C GF ketchup
1/4 of a red onion, diced

1/2 C GF Ketchup
Several dashes of GF Worcestershire Sauce
1 Tbsp Honey

Preheat oven to 350 degrees F. Combine meatloaf ingredients in a mixer or by hand and form into loaf, then place into baking dish sprayed with non-stick cooking spray. Bake in 350 degree F oven for 10 to 15 minutes, then mix glaze ingredients and spread heavily over the top of the meatloaf so it runs down the sides.

Bake for an additional 50 minutes or until 155 degrees F in the center.

Great with garlic mashed potatoes or any kind of veg.  Enjoy!
