There's nothing better than fresh summer corn on the cob...except maybe fresh summer corn on the cob grilled with rosemary butter! This recipe comes from one of my very best friends, (you know who you are), and is something we've enjoyed on many camping trips, or just for an evening get-together. This is one of my favorite side dishes and is easily thrown on the grill around your steaks, burgers, chicken, etc. If you don't want to mess with the corn husks, clean the corn completely and then wrap it in foil before putting it on the grill.
Corn in the husk
Butter (room temperature)
Fresh Rosemary (stripped from the stems and chopped)
Pull the husks back on the corn, leaving them attached at the base. Pull off all of the silk and discard. Slather the corn with the room temperature butter and sprinkle with the fresh rosemary. Pull the husks back up and place on a hot grill over indirect heat. If you like your corn more charred, put it directly over the heat for a few minutes. Close the grill and cook for about 20 minutes or so, turning occasionally. Remove from the grill and, using pot holders, pull the husks off and discard. Ready to serve!
