Easy Garlicky Grilled Chicken

Garlic and salt...two of my favorite things!  This slow-grilled chicken has a nice, light, garlicky flavor that is just delicious.  Moist and juicy + crisp tasty skin = Delectable Grilled Chicken!  If you don't have an injector...get one!  They really help to infuse the flavor deep into the chicken, and they're really inexpensive.  If you don't have one, however, all is not lost, just increase the marinating time in the olive oil mixture.  I injected this, and only let it sit in the marinade for about 1/2 hour and it was so flavorful!  Super easy too!


Chicken Pieces (I used thighs, but this will work with any skin-on chicken pieces)
Inject with:
Chicken broth mixed with several heavy shakes of Garlic Powder 
and a big pinch of Salt (to taste).

Marinate in:
Roasted Garlic Olive Oil or plain Olive Oil (enough to coat all the chicken) and...
Lots of:
Garlic powder
Onion powder
Poultry seasoning
(Don't be afraid of the amount of seasonings...the olive oil dilutes them quite a bit)

Grill on 275 - 300 degrees, skin-side up (indirect low heat) until interior reaches 165 degrees, about 1 1/2 to 2 hours.  Then, throw it skin-side down on high heat (directly over a burner) for 5 to 10 minutes to crisp up the skin, if desired. Ready to serve and delicious!
